Elecampane (Inula helenium) is a member of the daisy family native to Europe but naturalized elsewhere. Its roots contain inulin, a type of food-grade fiber used to sweeten processed foods and as prebiotic nutrition. Infuse in oil and alcohol for topical applications or to make balms, salves, and teas.
