Star Anise (Illicium verum), or Chinese Star Anise, is an exotic, star-shaped Asian shrub spice. With a licorice-like flavor, it's used in Indian & Asian cuisine, potpourri & teas. Store in airtight, cool & dark containers. Grind just before baking, as flavor fades in powder. Whole pods add a spicy touch to perfumes, potpourri & teas. Ground is best for baking, but wait to grind until you are ready to use or it will lose its flavor quickly,. Chew whole pod for breath freshening. Industrial uses include candy, gum & syrups and well as being used to make the drug oseltamivir, also known as Tami-flu. Use sparingly; a little bit goes a long way!
