Coriander, a beige, oval seed with a musky, peppery aroma, is used globally in different cuisines. In the U.S., its leaves are known as cilantro. Coriander's (Coriandrum sativum) common uses include pickling, rubs, curries, soups, stews, and braised dishes. In India, it's a major ingredient in sambhar and rasam. It's often combined with dill seed in pickling spices. Combined with cracked black pepper, it flavors soups, stews, and braised food.
